Instead I offer my version which could be called Coq avec le Vin.Two essential ingredients are a plump range-fed organic chicken and a large Tokheim Stoneware casserole. Put a bit of olive oil in the bottom of the pot before adding the chicken. Leave the pot uncovered in a 325° oven. Cook for 3-4 hours depending on the size of the bird.This will give you plenty of time to have a glass of wine while you prepare some delicious vegetables. The bonus is wonderful broth using the drippings from the chicken.
